Traceability in fresh produce: from sorting line to invoice

What to capture at each stage
- Intake: supplier, weight, variety, arrival temperature.
- Sorting: grade split, rejection percentage, operator and shift.
- Storage: chamber, entry and exit times, temperature excursions.
- Dispatch: customer, route, batch reference printed on the delivery note.
With that chain intact, gross margin can be read per supplier and per grade instead of per month. Buying decisions for the next season stop being guesswork.
